Menu Plan for Week 2

I've fallen off the menu planning wagon since summer started, because our schedule is so flexible in the summer. I've been reading Dawn at Fighting Foreclosure to get re inspired to plan. One of her suggestions is to make a flexible eating plan for the week. I have been trying to do this, but now I'm writing it down so that I can evaluate how it goes. I will plan for 7 dinners, plus lunches and breakfasts, which are pretty much set because we tend to eat the same things over and over.
Breakfast: cereal or waffles, toast with peanut butter and bananas (or tomato)
Lunch: Sandwiches (PBJ, grilled cheese, bologna, egg salad), salad
Dinner:
1. Oven-roasted chicken, mashed potatoes, summer squash
2. Left-over chicken :) I love leftovers!
3. Fish sticks, mac 'n cheese
4. Spaghetti with meat sauce or pesto
5. quesadillas, Spanish rice
6. Stuffed peppers, browned potatoes
7. Hamburgers or burritos (DS choice), potato salad
I'm going right now to clean and cut up carrots for the week. I already have romaine lettuce ready.
For backup, if I really don't want to cook, I have a frozen pizza for DS.
I'll have to buy more milk and fruit mid-week, but otherwise I think I'm set.

Sounds absolutely delicious! I forgot about quesadillas...easy meal and the kids love them! I'll have to add that one too!

Thanks for stopping by! Your menu plan sounds great. I write one out and put it on my fridge every week but I always forget to follow it. I really need to get better about that.

Need a recipe for those carrots, try the carrot & potato soup on this post. It's soooo yummy! And easy to make.

Sharon, my son loves quesadillas, too. Give him meat and cheese and he's happy. I, on the other hand, like all the extras with mine-- salsa, sour cream,refried beans, guacamole.
Elizabeth, it sounds like flexible menu planning is right up your alley. You get a pass on not following your plan because of your "delicate condition"!
Christine, thanks for the link! The soup sounds easy and like something I'd enjoy. I have lots of potatoes, too.

Sounds good! I do so much better both diet-wise and money-wise when I'm able to make some sort of menu plan for the week.

Of course, I'm travleling most of this week which makes it impossible. *sigh* But my fiance did go grocery shopping on Saturday to pick up things he can eat (usually he resorts to fast food when I'm not around). The two nights I'll be home this week it's looking like tomato soup and grilled cheese for me!

Leigh, it is very difficult to be frugal while traveling. Good luck! I'll bet tomato soup will taste great after days of restaurant food.
